This is our take on the classic pastrami. We make it from the leanest, most prized part of the animal which has a low fat content.
This meat is brined with a whole spice mix for three days. It's then mildly smoked and slow roasted. We rest it for a day, then it's sliced and packed.
Best used as a sandwich filling, or just as a cold cut on your charcuterie board.
